It provides a gluten-free option rich in protein, healthy fats, and vitamin E. Including coconut oil and coconut sugar adds medium-chain triglycerides and lowers glycemic impact compared to traditional white sugar.

Ingredients
  

  • 3/4 cup Walnuts, whole, coarsely chopped and toasted
  • 1/2 cup Butter 1/2 cup=1 stick, room temperature (avoid melted)
  • 1/4 cup Coconut oil 1/4 cup=4 tbsp
  • 3/4 cup Coconut sugar
  • 1/4 cup Brown sugar
  • 1/4 cup Inulin
  • 3 each Eggs
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Almond extract
  • 1 tablespoon Gelatin (1 packet = 2.5 teaspoons)
  • 1/4 cup Coconut water 60ml
  • 2 teaspoon Arrowroot powder (optional binder) www.naturevibe.com
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon reduces spike in blood sugar
  • 1 teaspoon Bittermelon herbal powder doesn't taste good, but reduces blood sugar from spiking.
  • 1 teaspoon Baking soda
  • 1 teaspoon Cacao Powder, organic
  • 2.5 cups Almond flour
  • 1/2 cup Coconut flour www.vivanaturals.com, contains 348mg potassium for 15g (2 tbsp) of coconut flour
  • 1/4 cup Hemp Protein Powder
  • 1/8 cup Psyllium Husks 1/8 cup=2 tbsp, used as a binder and fiber
  • 1/4 cup Coconut, shredded sweetened tastes better, unsweetened better for health
  • 1 cup Chocolate chips, semi-sweet Use cacao chips for better health
  • 1 cup Cranberries, fresh or frozen, puree in a blender (optional) contains pectin which has gelatin like qualities. Add coconut water and a tablespoon of organic white sugar. Note, difficult to find in a grocery store outside of Thanksgiving or Christmas.

Method
 

  1. Costco.com – almond flour ($13 for 3 lbs, item# 1178969), semi-sweet chocolate chips ($14 for 4.5 lbs, item# 807473), Coconut Oil ($18 for 84 fl oz, item# 1045706).
    Same Day Costco.com – Pure Vanilla Extract ($14 for 16 fl oz, item# 1072687), Butter ($12.86 for 1 lb, item# 41114), Walnuts ($9.35 for 3 lbs, item# 36285)
    Winco – in their bulk section, sells unsweetened coconut, coconut sugar and arrowroot powder (bulk spices section).

  2. Take butter out of the refrigerator and allow to warm up and soften to room temperature.
  3. Heat oven to 350℉. Lightly toast walnuts in oven (about 9 minutes, stir/toss/flip every 3 minutes). Remove from oven. Set aside. The alternative is to toast on the stove top.
  4. Add the following to a KitchenAid stand mixer and mix (slow speed and be patient): just combine the fats first (butter and coconut oil, don't over mix which will split the fats and the cookies will run). Then add coconut sugar, inulin and brown sugar.
  5. In a glass, combine gelatin and coconut water. Stir and let sit 3 minutes.
  6. Using cold eggs, break the yoke using a fork. Add to the stand mixer along with almond and vanilla extracts. Slightly mix.
  7. In bowl combine all the dry ingredients almond flour (except 1 cup of almond flour): optional arrowroot powder, baking soda, gelatin and salt, mix.
  8. Add almond flour 1 cup at a time while mixing. Add toasted walnuts, shredded coconut and chocolate chips, slightly mix. Adding the chocolate chips with the flour keeps you from overmixing and the flour kinda coats the chocolate chips.
  9. Using a 2 tbsp medium cookie scoop, place on parchment paper lined baking/cookie sheet. Place about 2-3 inches apart, typically 12 cookies per sheet.
  10. Bake in an oven set to 350°F for 18-20 minutes, or until the edges are lightly browned. Slide the cookies and parchment paper off onto a cooling rack. Place in the freezer for 10 minutes to keep the cookies moist. Then place in a container with a lid, store in the refrigerator up to 1 week.
  11. Serve with a glass of almond milk and enjoy your gluten free almond flour chocolate chip bites.
