Potato stuffing for Indian Dosas. Masala dosa is fermented rice and lentils pancake/crepe with a spicy potato filling.

Method
- Wash the potatoes, cut in half and place with skins down on a jelly roll cooking sheet with parchment paper. Drizzle olive oil and salt and cracked pepper. Bake for 1 hour at 350F.
- In a large frying pan, add 1 tbsp of olive oil, mustard seeds, black lentils (urad dahl), and cumin seeds on low heat.
- Add green chiles (Thai or Serrano), dried red chilies.
- Add chopped onion
