Homemade snickerdoodle cookies

Snickerdoodles

Ingredients
  

  • 1/4 cup water
  • 3/4 cup brown sugar
  • 3/4 cup organic white sugar
  • 1.5 tsp celtic salt
  • 1 tbsp gelantin
  • 1 tbsp arrowroot powder
  • 1/2 cup Inulin powder
  • 1/4 cup psyillum husks
  • 1 tbsp cream of tartar
  • 1 tbsp lemon juice
  • 1 tsp vanilla
  • 1 tbsp cinnamon
  • 1 tsp bittermelon
  • 1/2 tsp baking soda
  • 1 cup butter 2 sticks
  • 1/4 cup coconut oil
  • 3 each eggs
  • 4 cups white kamut flour

Method
 

  1. In a sauce pot, over medium heat, combine water, brown sugar and salt. Stir until the sugar dissolves and then set aside to cool.
  2. In a ceramic bowl, combine butter, coconut oil, vanilla and lemon juice.
  3. In a large ceramic bowl, combine white sugar, kamut flour, inulin, arrowroot, cream of tartar, cinnamon, bittermelon and baking soda.
  4. Add gelatin and psyillum husks to the cooled sugar water. Stir until it thickens. Then add to the butter mixture.
  5. Add slightly beaten eggs to the butter and mix
  6. Mix in flour using a silicone spatula
  7. Using a #2 cookie scoop, place on jelly roll sheet with parchment paper, three rows and four columns.
  8. bake 375F for 21 minutes. Remove cookies and place on a cooling rack.
