Method
- In a sauce pot, over medium heat, combine water, brown sugar and salt. Stir until the sugar dissolves and then set aside to cool.
- In a ceramic bowl, combine butter, coconut oil, vanilla and lemon juice.
- In a large ceramic bowl, combine white sugar, kamut flour, inulin, arrowroot, cream of tartar, cinnamon, bittermelon and baking soda.
- Add gelatin and psyillum husks to the cooled sugar water. Stir until it thickens. Then add to the butter mixture.
- Add slightly beaten eggs to the butter and mix
- Mix in flour using a silicone spatula
- Using a #2 cookie scoop, place on jelly roll sheet with parchment paper, three rows and four columns.
- bake 375F for 21 minutes. Remove cookies and place on a cooling rack.
