Ingredients
  

Steep Tea
  • 2 cups water. boiling
  • 1.3 tbsp Green tea (0.3 tbsp = 1 tsp) 30% green tea
  • 1 tbsp White tea 25% white tea
  • 1 tbsp Oolong tea 20% oolong tea
  • 1 tbsp Yerba Mate loose tea optional - higher caffeine
  • 2 tsp Red Rooibos loose tea 15% rooibos tea
  • 1 tsp Red Raspberry leave 5% raspberry leaf
  • 1 tbsp Dandelion root loose tea 5% dandelion leaf
  • 1 cup Cane sugar, organic
Pitch SCOBY
  • 3 quarts water, room temperature
  • 2 cups Steep Tea from above, room temperature, tea bags and/or leaves removed
  • 1 each SCOBY
  • 1 cup starter tea (from previous Kombucha batch )
  • 1 gal Glass jar
  • 1 each Coffee filter paper with a rubber band
1st Ferment 6 days
  • pour everything into 1 gal glass jar and cover with coffee filter paper and rubber band. Place on kitchen counter, out of direct sunlight. Let ferment for 6 days.
2nd Ferment
  • pour kombucha fermented tea into glass bottles with a swing top lid
  • Mango juice
  • Cayenne pepper
