Healthy Instant Pot Beef and White Bean Stew

This healthy Instant Pot beef and white bean stew combines tender chunks of beef stew meat with protein-packed white beans, carrots, celery, potatoes, and a flavorful herb-infused broth for a nutritious, comforting meal. It’s quick to prepare with searing and pressure cooking in one pot, then finished with fresh greens for added vitamins, making it perfect for cozy, high-fiber dinners.

Ingredients
  

Stew Meat
  • 2 lbs Beef stew meat Costco
  • 2 tbsp Beef tallow
  • 1 tbsp Red wine vinegar Blood Type O diet says to avoid. Use Apple Cider Vinegar instead.
  • 1 tbsp Worcheshire sauce. Alternative is Anchovy paste, olive oil, salt, garlic, onion powder, and lemon juice (instead of vinegar). Blood Type O diet says to avoid
Oven
  • 5 each Sweet potatoes, medium size, cut into chunks Original recipe used yellow potatoes but Blood Type O diet says to avoid. Use sweet potato instead, yams are neutral.
  • 4 each Garlic cloves, smashed
  • Coat with Olive oil, salt, pepper, smoked paprika, and herbs (rosemary and thyme)
Vegetables
  • 1 each Onion, large, diced
  • 3 each Carrots, medium, sliced into chunks
  • 3 each Serrano Chili
  • 1 each Parsnip
  • 1 each Turnip
  • 1 each Beet
  • 2 each Celery stalks, chopped
  • 2 cups White beans (Cannellini or great northern) soak overnight
  • 4 each garlic cloves
Broth
  • 6 cups Water
  • 2 tbsp Organic Better Than Bouillon roasted beef base alternative 4 cups of beef broth
  • 1 each Mushrooms, sliced Blood Type O diet says to avoid.
  • 1 each Peas, frozen, 16 oz bag Neutral on the Blood Type O diet. Likes Black-eyed pea instead.
  • 1 each Green beans, frozen, 16 oz bag Neutral on the Blood Type O diet
  • 1 can Tomatoes, diced (14.5 oz can) Neutral on the Blood Type O diet
  • 1 tsp dried Thyme
  • 1 tsp dried Rosemary
  • 2 each Bay leaves
  • 1 tsp Paprika
  • 1 cup Parsley, chopped

Method
 

  1. Soak dried white bean in water for at least 1 hour, prefer overnight.
  2. Heat oven to 425F. Wash potatoes, cut into 1 inch chunks. Toss in a bowl with olive oil, rosemary, thyme, garlic, salt, pepper, and smoked paprika. Add to a jelly roll pan lined with parchment paper. Bake for 40 minutes, turning the potatoes halfway through.
  3. Place a paper towel on a plate then add the beef stew on top. Sprinkle with salt and lit sit for 60 minutes to dry the meat surface.
  4. Instant Pot - sauté heat setting or cast iron Dutch Oven. Just before it starts to smoke from the heat, add the beef tallow. Then add the beef stew meat with plenty of space (crowding the meat will cause it to steam). Sear the meat for 90 seconds on 2 or 3 sides. Do not move the meat during these 90 seconds. Want dark brown / nearly black patches. The inside of the meat should still be very undercooked. Remove from the Instant Pot and set aside.
  5. Add red wine vinegar and worcheshire sauce to deglaze the pot. Add this juice to the cooked beef stew meat.
  6. Add chopped onions, carrots, and chili. Saute about 3 minutes.
  7. Add celery, garlic,
  8. To the Instant Pot, add water, soaked beans, frozen beans, frozen green beans, canned tomatoes, and Bouillon. Place the lid on and pressure cook for 20 minutes.
  9. Release the pressure. Add parsley, meat, and potatoes. Place the lid on and pressure cook for another 10 minutes. Remember the collagen in the meat only melts at low heat over time.

Homemade Worcestershire Sauce

Anchovy sauce

Blood Type O beef marinade.

Ingredients
  

  • 2 oz Anchovy Fillets (1 can) sold by Trader Joe's. Don't rinse, part of the flavor.
  • 1/4 cup water
  • 2 tbsp Lemon juice, fresh
  • 1 tbsp Olive oil
  • 1 tbsp Honey
  • 1 each Garlic clove, minced
  • 1/2 inch Ginger root, minced
  • 1 tsp Salt
  • 1/4 tsp Cayenne pepper

Method
 

  1. In a sauce pan, over low heat, add minced garlic and ginger with olive oil. Warm for 1 minute, just until fragrant (do not brown).
  2. Add anchovies, stir gently until they melt into the oil. About 1 minute.
  3. Build the sauce by adding the remaining ingredients. Bring to a very gentle simmer. Cook 5 minutes, stirring occasionally. Remove from heat and cool.
  4. For a smooth finish, blend with an immersion blender.
