German-Style Beef Patties with Mustard Seeds

Frikadellen-Inspired, these German-style oven-baked beef patties are packed with onions, herbs, mustard seeds, and fenugreek for a bold, savory flavor. Perfectly paired with tangy sauerkraut, arugula, avocado, and Pecorino Romano cheese, they offer a healthy, low-carb twist on a classic comfort dish.

Ingredients
  

  • 2 lb Ground beef (80/20), organic, grass-fed
  • 1 each Onion, finely chopped, medium-sized
  • 1 cup Parsley, finely chopped
  • 1 cup Cilantro, finely chopped
  • 5 each Fenugreek sprigs, remove stems, finely chopped Optional, purchase from India store
  • 2 each Chili pepper, seeds removed, finely chopped
  • 4 each Garlic cloves, crushed
  • 1 tsp Thyme leaves (4 sprigs with stems removed)
  • 1/2 tsp Oregano leaves, dried
  • 2 each Egg
  • 1/3 cup Almond flour
  • 1 tbsp Apple cider vinegar
  • 1 tsp Salt
  • 1 tsp Pepper, cayenne Blood Type O should avoid black pepper
  • 1 tsp Turmeric powder
  • 1 tsp Paprika, smoked
  • 1 tsp Mustard seeds, lightly toasted then ground Yellow and/or Black
  • 1/2 tsp Fenugreek seeds, lightly toasted then ground

Method
 

  1. 30 minutes before eating meat, drink a glass of water with apple cider vinegar and Betaine HCl, and take some enzymes (Bromelain and/or Papain) to help with protein digestion.
  2. Preheat Oven to a 400°F (205°C).
  3. In a sauté pan, lightly brown the mustard and fenugreek seeds. Then add to a spicy grinder.
  4. Mix Ingredients. In a large bowl, combine ground beef, onion, parsley, cilantro, thyme, oregano, chili peppers, garlic, egg, almond flour, salt, and smoked paprika. Mix gently - don't overwork the meat.
  5. Form Patties. Shape into 8 large size patties, about 3/4-inch thick. Should fill the completely fill the standard size jelly-roll pan (13"x18" half-sheet). Press a small indentation in the center of each patty.
  6. Prepare Baking Sheet. Line a jelly-roll pan with parchment paper, then place the patties on it.
  7. Bake for 25 minutes or until the internal temperature reaches a 160°F (71°C)
  8. Broil (Low heat setting) patties for 2-3 minutes for a crust. Flip over and repeat. Remove from the oven and let it sit for 5 minutes before serving.
  9. In a large bowl, toss together some arugula, sauerkraut, and sliced or cubed avocado. Then add the beef patty. Grade some Pecorino Romano cheese over it all. Serve and enjoy.
